Hello

Is it possible to fully operate my Android using my laptop's touchpad and keyboard?

Preferably without an app that is dodgy or has ads etc.

Most of what I have found, is simply to access the folders/files plus some functionality like send sms but I need to see on my laptop my true phone screen and me able to use a cursor/keyboard to operate it as if I was using my phone.

I think Samsung has a proprietary tool and Android offers a screen cast feature (but probably only for display, not for remote control of the device)

It's certainly easy to operate your android tablet with a nice small standalone bluetooth keyboard and mouse..

Google has hidden it well. :)
It's easier to connect than the instructions on github indicate.

I just found about sndcpy to forward sound to the desktop as well (which doesn't happen by default)
https://github.com/rom1v/sndcpy
These two tools + OBS Studio are a good way to record screen videos from your phone.

This new version also includes an option to select the video and audio codecs. The device screen can now be encoded in H.265, or even AV1 if your device supports AV1 encoding (though this is unlikely).
