there's always the analogue solution - always on, instant availability, no distractions

my only issue with this solution is that the font it comes with is terrible

Just use TinyCore Linux and install Abi Word or some similar word processor.

Very minimalistic (~10MB full iso) and would do the job nicely, I think.
