is there a tool or web service to convert MOBI or EPUB files to PDF while influencing/adjusting font size?

Wooow! That's some seriously huge tool... and free! ...and comes with an intuitive interface!  Kiss (I love that lots of options are explained when you mouseover them.)

To eliminate the big download you could use http://ebook.online-convert.com

However, I don't like the look of the pdf files produced from this - but I suppose it is possible to dress them up using some of the pdf utilities

You must know about ePub, The EPUB format is an open standard. That means it is free and publicly available though there are specific rules for its usage. The EPUB standard is maintained by the International Digital Publishing Forum (IDPF), a global trade and standards organization. EPUB can display re-flowable content (that can adjust its presentation to the output device) and also fixed width layout. It is very similar in appearance to HTML rendered pages with images., to know how to convert: how to convert mobi to ePub ebooks.

Partial answer: Hamster Free eBook Converter does a passable job interconverting among mobi, epub, text, pdf, lit, etc. But I don't think you can manually specify font size. Of course, don't some PDF readers let you +/- the text-size?
