The referenced offline tool, Conceptdraw, seems to come closest to what I was looking for. The screenshots don't show a whole lot, but it might be worth a shot.
I'm quite surprised how hard it appears to be to find a utility like this. After all, it sems this would be perfect coding practice for someone looking to solidify an understanding of recursion...
