Is it possible to change the buttons in Motorola G7?

The left button goes back and the right button opens the task manager.
Is it possible to switch them?

Why change it? That's how it's supposed to be. AFAIK all Android devices work that way, except Samsung decided to be different and put the "back" button on the right, even though the icon has an arrow pointing to the left.

But if you really want it changed anyway, then I think you'll need to install a custom ROM. I'd suggest asking around on xda-developers.com.

the G7 also has one button navigation, not sure how it works, you could let is know if you try it.

Yes I tried it, I don't like it. It's slower to slide to go back when you can just tap.
