I need an expert from out of town. Hell, maybe from out of the country?

The above line is from the website Memory Secrets.
I've downloaded the site and trying to edit out all extraneous script, etc., so I can compile it into a .chm file. That site is in the UK and I can't figure out how to clean up the formatting when I edit and save in Notepad ++.
There are several options for different formats such as Windows Format, Unix Format, UTF-8 with BOM, and more, but I still wind up with Greek in a saved file. Quotation marks and apostrophes seem to be the biggest offenders.
Am I making any sense and can anybody help? I'm too old to cry!
